½ cauliflower, about 1lb 2oz (500g)

1 tbsp chili oil

2 tbsp olive oil

pinch of chili powder

2  tsp mild curry powder pinch of ground allspice

½ tsp ground cumin pinch of ground turmeric

3  slightly heaped tsp Thai chili paste

Preheat the oven to 375°F (190°C). Split the cauliflower into florets and place in a bowl. Line a baking sheet with parchment paper. Put both types of oil into a screw-top jar along with all the spices and the chili paste. Close the lid and shake the jar vigorously until the ingredients combine to make a smooth paste.

 

Use your hands or a pastry brush to distribute the spicy paste all over the cauliflower florets. Spread the cauliflower over the baking sheet and bake in the center of the oven for 25–30 minutes. Use a toothpick to test whether it is cooked; it should pass through a floret with no resistance. The cauliflower is delicious warm or cold.
