|1 cup (235 ml) unsweetened soy-free non-dairy milk
1/3 cup (80 ml) water
1/4 cup (65 g) peanut butter
3 tablespoons (45 ml) maple syrup
1 teaspoon vanilla extract
2/3 cup (53 g) rolled oats Pinch of salt
1/2 cup (30 g) peanut butter pretzels, broken into smaller pieces
Maple syrup, for serving (optional)
|In a small pot, combine the soy-free non-dairy milk, water, peanut butter, maple syrup, vanilla, and rolled oats over medium heat. Bring to a boil, adjust the heat to medium-low, and simmer for 5 minutes, stirring occasionally, until the oats are fully cooked.
Stir in the salt and divide the oatmeal between 2 bowls, topping each with 1/4 cup (15 g) of crushed peanut butter pretzels and a light drizzle of maple syrup, if using.
